Only 5 ingredients and this meal is ready in 15 minutes. Loaded with crispy bacon and lots of parm. Excited to have the kids try this one because lately they’ve been requesting their noodles sans sauce anyway.

I’m excited to try this one. All the ingredients are things that will be in your pantry, except fresh parsley and I feel like that could even be optional.

Ok, this is another one of my own go to recipes, one of my kids’ favorite 15 minute dinners. We actually just had it last night and we ate the entire thing.
Ingredients:
1 lb ground beef/ turkey (I prefer turkey)
1/2 onion, optional
1 can tomato sauce
1 can refried beans
taco seasoning to taste – I just eyeball it
tortillas – I use flour
grated cheese to cover top
Directions:
Preheat over to 350. Brown meat, add taco seasoning & onions mix well. Add refried beans mix well and remove from heat. Pour tomato sauce in the bottom of 8×11 baking dish. Enough to cover the bottom so the enchiladas don’t stick. Add stuffing to to tortilla and roll up. I usually end up with 6-8 tortillas. Pour remaining tomato sauce over enchiladas. Cover with cheese. Bake 30 ish min, until cheese is brown. Serve with salsa, sour cream and guac.
